SPROUT SALAD
1 handful of pea shoots
1 cup sandwich blend
1 cup broccoli blend
½ cup crunchy bean mix
½ cup ancient grain blend
½ cup mung beans
Optional: a bed of mixed greens, tomato, red pepper, avocado, quinoa, smoked tofu, toasted pumkin/sunflower seeds and whatever else you desire!
Chop pea shoots into half or thirds. Layer with sandwich and broccoli blends. Sprinkle the rest of the ingredients on top and lightly mix all layers together.
Put the amount you’re going to eat in a bowl and add your favourite salad dressing. Leave the leftover sprouts undressed in the fridge and they will be ready for next time.
